- The Távora-Varosa region in northern Portugal, also known as " Terra de Cister " (Land of Cister), takes its name from the rivers, tributaries of the Douro River, that cross it: the Távora and the Varosa. Its wine production history is ancient, dating back to Roman times and perpetuated by the monks of the Monastery of São João de Tarouca. With a considerable altitude (between 500 and 800 meters), a climate of harsh winters and hot summers, and granitic soils, the region produces wines with exceptional acidity, freshness, and minerality.
- The Távora-Varosa Regional Wine Commission (CVR Távora-Varosa), created in 1989, is the entity that regulates and certifies the wines of the region, guaranteeing their authenticity and quality. It was the first wine region in Portugal to be demarcated for the production of sparkling wines . For white sparkling wines, the most used varieties are Malvasia Fina , Chardonnay , and Pinot Blanc . The region also allows the use of Bical, Cerceal, Gouveio, Folgasão, and Dona Branca . For rosé sparkling wines, the key varieties are Pinot Noir, Pinot Meunier, Tinta Roriz , and Touriga Franca . Other permitted varieties are Alvarelhão, Tinta Barroca, and Touriga Nacional . The region also produces still wines. In white wines, Malvasia Fina, Fernão Pires, and Bical stand out. In red wines, the main varieties are Touriga Nacional, Tinta Roriz, and Touriga Franca .
